08 Feb “Rösti” – vegan potato pancakes

This is a very popular recipe in several Central and Eastern European countries and that our chef Manu cooks with a lot of love in our retreats.
Ingredients for 6 people
1 kg of potatoes
Garlic powder (if it is fresh it is better to grate it)
ground black pepper
Chopped fresh oregano
A pinch of salt
Olive oil
- Wash and grate the raw potatoes, they can be peeled or not, try both ways and see which one you prefer.
- With your hands squeeze out some of the excess liquid in the grated potatoes and then transfer to a bowl. Removing the excess of water helps make the potato crispier (otherwise all that water has to steam out in the pan)
Don’t worry if your potatoes go brown / reddish while sitting around. This is just from oxidation, once you start cooking, it will change back to white; - Mix the potatoes with all the other ingredients: garlic, ground black pepper, freshly chopped oregano and a pinch of salt.
- Then create some round-shaped bundles of grated potato about 1 or 2 cm thick. You can use a stainless steel biscuit cutter to do this. Pack it in tightly so it does not fall to pieces.
- Heat some olive oil in a non-stick pan. Then carefully add the potato pancakes into the pan, making sure that they do not fall apart, use a flat spatula and press down the pancake so it stays flat and together.
- Cook over medium heat for about 7 or 8 minutes each side until they are a golden brown colour. Then remove from the pan and place on some kitchen paper to remove any excess fat before serving.
You can enjoy your Rösti potato pancakes with salad, with roasted vegetables, in a sandwich or with any toppings you like or imagine! They are just perfect as a side dish.
