10 Jun Sivananda cookies
This is a very special recipe here in Casa Cuadrau. The Sivananda cookies are prepared and served globally, in all the yoga centres of this specific yoga school. Although we are not part of this school, we decided to take this precious recipe and prepare it here, to offer the cookies to our retreaters during welcome day, at the beginning of retreats. If you look at the list of ingredients, you will notice that these cookies are quite rich, they can be enjoyed as part of breakfast or as a snack, but also as a nutritious energetic bar after working out, for example.
A couple times we have prepared these cookies, just to realise that we were missing an ingredient, for example grated coconut. In these cases, we substituted with another similar ingredient that we did have, or we simply prepared them without the coconut. This recipe is not strict so we encourage you to get inspired and creative. On the other hand, if you would like to get a result as close as possible to what you tasted here at Casa Cuadrau, then following the recipe is a good idea.

Sivananda cookies
Ingredients
- 10 cups oats
- 2 1/2 cups dates or apricots
- 2 1/4 cups whole wheat flour (or spelt)
- 2 1/4 cups olive oil
- 2 cups brown sugar
- 1 1/2 cups water (or more, if texture is too dry)
- 1 1/2 cups grated coconut
- 1 1/4 cups cacao powder
- 1 cup sesame seeds
- 5 tbsp ground cinnamon
- 2 tbsp ground ginger
- 2 tsp baking powder
Instructions
- Preheat the oven to 180-200ºC, upper and lower hear (not grill, not fan).
- In a large bowl, mix the dry ingredients until well combined.
- In another bowl, mix the wet ingredients (water and oil) and add them to the large bowl. Mix well with a fork or spatula.
- Using your hands, take a small ball of dough and shape it into your favourite cookie shape. Add them to a baking tray and bake for about 25 mins. Watch out to ensure they don’t overcook or burn!
- Once baked, let them sit to cool down for 20 mins.
